Hidden in a remote vineyard of 10 acres, the old Provencal «bastide» of the Clos des Roses appears as a landscape painting. On the first ground, a sea of field flowers, glowing in the sunshine of spring and designing a vineyard is framed by umbrella pine trees. Here and there, impressive piece of art seem at ease while the small chapel remains silent and discreet. The rose garden, during the month of may, offers a captivating path. Even though the Clos des Roses is only a few miles away from the (very busy) road leading to Fréjus, nature gives the place a comfortable «time off».
On the terrace of the Clos des Roses
In the kitchen, Fabien Pasquale keeps himself busy. From the restaurant dining room, you can see the chef and his troops working in the open kitchen. Plates comes and goes into a beautiful, fast dance and the elegant compositions parade perfectly on the terrace located in the heart of the vineyard. Season products, vegetables from the garden, local fish and meat: they all look fantastic. The menu keeps promises! The melt-in-the-mouth beef tenderloin is amazing and the dessert menu is as good. Moreover, every plate is full and well served.
A night among the roses.
Above the terrace, you can see the windows of the 8 rooms of the hotel labelled « Châteaux et Hôtels Collection ». They are all named after the name of a type of rose and welcome you in a cosy, elegant frame (queen size bed, footbath…) with a stunning view of the vineyards. Have a look on the vine tasting vault in order to taste the rosé Dame de Cœur. This wine, with its pale salmon robe, mixes the flavours of lychees and white flowers. As a good «Grand cru», its body and smoothness will amaze your palate. Collectors of beautiful flasks advisory: this rosé exists in magnum-size but also in magnum-size but also in more impressive shapes such as jéroboam (3 liters) or mathusalem/imperial (6 liters) in the vine tasting vault. Guided tours of the chapel, of the winery and of the vineyards are organized every Thursday at 11 a.m.
